Hello! So I'm a relatively new DM. Whenever I start a campaign, I make sure I have another DM as a player so they can point out rules or messups I make. I study the DM manual and the handbook, and I'm currently on the second readthrough of the manual… that being said, I have three players in a homebrew I'm doing. There quest is to deliver a letter from friendly territory to enemy territory. Each PC has different feelings about the quest, and they have yet to discover that the letter was written in a special ink that they can only read at night, and therefore they don't know what the letter says.
So, they started at level three and are now level 5 (It's a short campaign, about 6-8 sessions and I wanted them to have some power, but not be overpowered). Unfortunately, one player went Bloodhunter and is Min/Maxing just to see how powerful the class is. He one hit the first starting boss while the other two players barely survived the encounter. Everything was balanced for a normal level 3… but his power is insane. Now he's doing about 30-40 damage per hit, if something isn't undead. The other players can do between 10-20, sometimes a bit more if they use sneak attack or barbarian rage.
I've given the other two players some items so they can do about the same amount of damage as the Bloodhunter per attack, and I have a whole homebrew plot about a different dimension attempting to overtake this one with a new damage type (Dark Energy). The barbarian sacrificed an 18 year old girl on a dark alter and now he is stuck with her evil spirit in his mind, but he can use a damage spell (they are also all pretty much melee characters since the rogue is deciding he doesn't want to use his bow), however, the magic hurts him and costs a part of his soul everytime he uses it, but it is a bonus action. Now, the barbarian can essentially do as much as the Bloodhunter.
Now, with the ampunt of damage output from the party I had to increase the health of enemies, but keep damage the same as everyone has between 20-40 health. Everything feels super unbalanced.
TLDR: In order to fix a PC that was min/maxing damage, I gave my other PCs OP weapons. Now my enemies are either getting one hit, or combat lasts too long. Any hints or help?

The class you choose will be 20 levels in Rogue, Assassin archetype. These are the most important features for this build. Once per turn, you can deal extra 10d6 damage to one creature you hit with an attack if you have advantage on the attack roll. The attack must use a finesse or a ranged weapon.
